Azerbaijan has been called the Land of Fire for centuries — flames rise out of its ground. Its food sits where the Caucasus meets the Caspian: Turkic fire, Silk Road spice, and a table that always has room.

The Mangal

Skewers over live charcoal. Lula kabob of ground beef and lamb, chops, lamb tips, chicken — seared fast and served hot off the fire.

The Oven

Bread baked in-house, and it comes with nearly everything. Soups arrive with it. Salads arrive with it. That's not a side; that's the foundation.

The Table

Kufta soup, cold ayran, baklava under honey. Food built for staying a while.

The bread is baked here. It lands on the table warm, with the soups, with the salads, with the chicken. Everything else is built on top of it.
